A signature cocktail, by France Rainteau @francernt of the Candeleria bar in Paris.
- 60 ml Mataora Mediterranean Dry Gin
- 40 ml lime/ thym citron/ ginger cordial
- 20 ml lime juice
- For the Cordial: Put equal parts of ginger juice, lime juice, and sugar, and a dash of lemon thyme in a pot. Bring to boil, remove from heat, set aside to cool before use.
- Build in a Coupette (big one if possible), no garnish
